Ive got a 2017 Kubota Z725 Mower that is leaving areas of uncut grass. The blades are cleaned and sharpened. I also have been making sure I don't mow until after the morning dew has lifted. Unsure where to start troubleshooting this.
 
Since you've covered the basics, my first thought is to check your deck height. The front edge of the deck should be slightly lower than the rear to ensure a clean cut and proper discharge. If the deck is level or pitched up, it will leave strips. Also consider your ground speed. Slowing down, especially in thick grass, is the easiest fix if you're pushing the machine too hard. Lastly, I'd also inspect the blades for proper overlap. If a spindle has shifted, the blades might not be covering the entire cut path.
 
I think there should be an issue with the deck leveling or blade spacing issue, look at your mower deck height to be sure
 
Also, make sure your mower's deck belt is tight and in good shape. If the blades aren't spinning fast enough, even sharp ones will miss grass.
